Although I have not done a whole hog, much less 8 of them, the methods seem tried and true and of a fine BBQ tradition. Isn't it amazing how the NY Times almost makes it sound like an aberration; like something from another planet? I guess they can' comprehend that there's a whole bunch of us out there in the smoke, every week. Nice to see what appears to be a great joint ger some press. I hope it doesn't affect their product.
