Tenderloin was lightly cross cut, bathed in mix of egg, Dukes mayo, Braswell's honey habanero, black pepper & Franks hot sauce. The rolled in 2 kinds of crushed hot corn chips and grilled to an IT of 145.
Let it sit a couple minutes, sliced it and made sliders. Here's a pic of before. Libations were flowing the game was on and I forgot to take a finish pic. It turned out perfect and they were gone in a heartbeat.
