I had to try my Tatonka dust out and I didn't have time to fire up the kettle so I just did a quick fry in the cast iron pan with my pork chops. I covered the chops with a little salt, tatonka dust and a few pinches of herbs de provence and let them sit in the fridge for a half an hour. I head up my cast iron pan and seared them and took them do about 150 internal temp and they were perfect. The only problem I had was a lot of the seasoning wanted to fall off in the pan so next time they will definitely be going into the kettle for a little smoke bath.
My goodies.

All seasoned up and ready for a rest.

Hitting the fry pan for a little sear.

Horrible plated picture but you get the idea.

I love this stuff and I can't wait to throw it on some beef tonight.

Looking good to me!
