Take care of your metal. I finally got around to cleaning out the ash in my smokers from the 4th. That was a lot of ash. This weekend I will work on the inside of the cook chambers. That part I am dreading. I made so much food that I took a peak today. Caked on grease and food droppings on the bottom. The tuning plates I will need to pressure wash. Along with the outside. I keep the outside coated in oil. And then when it's all finished up, I coat with peanut oil and hit it with a dry out burn.
 
I have a water drain on my Lang & when I'm done with a smoke, I crank the temp up to 350 & I just wire brush the racks & spray the inside with a garden hose. Then just shut the lid & everything gets steam cleaned. Every so often I have to take a putty knife to the RF plate, but that's only a couple of times a year. Most of the time the crud just rinses off with the water hose. After it drys out I spray the inside with Pam. I also spray the outside of the firebox with Pam. So far no rust anywhere.
