I would like to try making some sweet italian sausage this weekend and was looking for some opinions on Ryteks recipe?  Is it a good one?  Anyone reccomend modifications or a personal recipe they would like to share??

I did ryteks  italian and it was one of his good recipes. It tasted just like you would get at the fair.........
 
 
I made 5 lbs of Martin's recipe posted above. Excellent!!

Here's my recipe.......

Sweet Italian Sausage Americano

1 Kilo (2.2 lbs.) well-fatted pork butt
2 tsp. Kosher Salt (or to taste)
2 tsp. Fresh Ground Black Pepper
2 tsp. Crushed Fennel Seed
2 tsp. Coarsely Ground Coriander
2 tsp. Crushed Anise Seed (This is essential.)
1 Tbsp. Dried Parsley Flakes
1/2 tsp. Garlic powder
1 tsp. Sugar
1/4 cup Ice Water

For Hot Italian Sausage Americano add 2 Tbsp. Sweet Paprika and 1/2 a tsp. Ground Cayenne (or to taste).

Grind through a 3/8 plate, grind half of the freshly ground pork through the same plate once more.

Mix to combine the salt and seasonings, refrigerate overnight, then mix well until sticky (test the saltiness) and stuff into hog casings.
