My local supermarket had NY stake (boneless) on sale for $4.99 so I could not resist. Asked a guy in the meat department to cut 2" three stakes for me and he did. Not exactly 2" but close...
Next day (Saturday) got them from the fridge partially frozen and in SV container. Meanwhile, started cooking 6 doubled baked potatoes and a creamy spinach. Cooked stakes for 3.5 hours with water temperature of 131F. In 3.5 hours out of water and plastic bags.
Seasoned with S&P only.
Used my propane torch to sear stakes - doesn't take too long....
I sliced my stake and left my son's stake uncut, the way he wanted it.
Here is my son's plate with some creamy spinach on it...
and some double baked potatoes made of red, medium sized potatoes...
Verdict: great, great stake! Very tender, juicy and so tasty!!
