so I’m going to try some bacon wrapped stuffed chicken thighs today. I bought some jalapeños to stuff them with along with cream cheese. For those of you who have tried this. Have you ever used serrano pepper instead? If so did you prefer the extra heat from the serranos? I have to decide before I start them. Thanks in advance.

I've done it with chicken breast and I used candied Jalapenos and regular ones. It all depends on whom you are cooking for you know?

I also haven't smoked them though on my smoker; I used pear wood on my char-griller to one side for indirect heat. Still turned out good.

I decided to go with jalapeños for the stuffing. So these are the prep pics. Stay tuned for the results.

Thanks Al. They were just fantastic. So easy to make and didn't take long to cook at all. I would use a bit more glaze the next time around but all in all we were both very satisfied with the way they came out. Two thumbs up for this recipe which is on the archive page.

Do you know what the IT was when you pulled them off the smoker and put them on the grill by chance? I just cooked thighs yesterday since I read that thread the other day about cooking dark meat longer. I cooked it to 190.

I had my alarm set for 170 but forgot to hit the audio button so never heard it go off. It was at 180 by the time that I noticed. There was no issue at all with dryness. The meat was super juicy. Just a great recipe from Jeff. Most definitely a keeper.
