The tobasco adds flavor and a hint of heat, but being with the buttermilk it's more of a flavor than heat.
 
Man that looks good. I really shouldn't read this forum hungry.

I'm now just smoking in my mind, laying plans for the first few things I want to try when I get my smoker (probably an MES), and this really changes things. It had never occurred to me to use the smoker as merely a single step in a longer preparation.

Now I've got more to think about.
