Looking at smoking a corned beef flat and making sammiches out of it. Anyone have any tips or suggestions for the flat or recipes for a good sauerkraut? Thanks!
 
I use the recipe on makesauerkraut.com comes out great everytime. You might be late though. It takes at least three weeks to make a good sauerkraut in my opinion and it gets better as it ages. Someone else may have a shortcut recipe for you.
 
You’re too late for kraut. The recipe I use is three tablespoons of salt to 5# of cabbage. Clean and slice your cabbage, layer in the salt and work it with your hands until the cabbage has released it’s liquid. Pack it into your crock and let ‘er go. I like five weeks.
