I found one on sale today so picked it up. I injected it and rubbed it down.

What IT should I shoot for?

About how long per pound to get there? I have a small hog smoking that should take a good part of the day and just need to know when to throw on the chickens!
 
165* is the temp. The time it will take is dependent on your cook chamber temp.

If it's about a 6# then roughly 1.5 to 2hrs. Split chicken will probably be less. Remember go by temp. not time. You may want to pull it off before it's done and finish it on a grill or oven at 325*+ to crisp up the skin.

I shoot for an IT of 175° in the thighs.
165° is safe, but I like my chicken a little more done.
Will take anywhere from 1.5-2 hrs depending on the bird and temp.
I like to finish my smoked birds skin down on a hot grill to crisp the skin.
