Yield on shoulder clods blows yield of brisket away! There is very little if any trim loss vs. like 25% or more on a brisket. Cooking loss is also on par with or less than brisket overall making a way more economical and every bit as good smoked beef. Near me whole clods can be had for around $3 a lb. If I want to do a case can get down in the #2.79 range.2 1/2 lbs out of a 7 lb roast?????? seems like a small amount. Did I miss something here?
