Spicy Squash and Zucchini Tian
Start with a layer of Rotel Cilantro Lime, tomato sauce and spiced with salt and cilantro.
Then vertically layer with sliced zucchini, squash and onion.
Scatter some minced, fresh Jalapeno across the top.
Top with more Rotel, tomato sauce, spices and several pats of butter.
Bake at 375° till veggies are hot and just tender.
This can easily be done as an Italian style dish with plenty of olive oil, fresh basil, oregano and thyme.
A bottom layer of rice and meat turns this into a one dish, casserole meal.
