I have been thinking about "Spatchcocking" a turkey. Opinion check... Will this cooking method produce a drier meat than leaving the bird intact?

No, it won't be dry as long as you practice good technique, in fact, the bird is usually done in about half the time it takes to cook a whole intact bird, which, in itself, means less drying.
