Hello all, my name is Steve and I'm in Southern Maryland, USA. I am 62 years old, retired and well experienced in cooking of all kinds. I have smoked everything you can think of. :>)  I used to smoke a lot of bluefish in my younger days and have a brine recipe that is a masterpiece. I have a horizontal Royal Oak charcoal smoker and also a Little Chief vertical electric smoker that I haven't used in years. Not being as energetic as I once was I don't do a lot of smoking these days. I do like camping and wish I had room to haul my big smoker with me. My goal now is to be able to prepare smoked favorites and pack them for just a few days and reheat in camper with gas grill or on small Weber charcoal that I carry along, or in the small oven. Campfire cooking on a grate or in the 22' cast iron skillet that I also carry is a favorite. Cast iron skillet on a newly re-sparked (maybe add a little charcoal for a nice coal bed) campfire, add bacon, sausage hashbrowns, eggs and sometimes my favorite, pancakes. That cast iron also works well on the gas and charcoal grills as a flattop. Balance can be tricky. I also like pizza on the grill, this works great on the horizontal side-by-side. Ask for my little tricks if you want.
