I normally use a temp of 140 . So just keep and eye on it at 155 .
I'm sure you've done it before ,,, just incase .

Bought a Sous Vide rig when they first became a thing.
While it does do somethings well I found it to be very limited in function.
It's great when you have a bunch of people over.
But it's usually just the Wife and I and maybe a couple friends.
Not to mention the Wife and I both like our steaks rare.
Bring em to room temp,season em and Sear the Crap out of em over a VERY Hot Fire.
Done.......

I have been using this chart for sausages. I have some similar charts, just can't find them.
