Soda vide to finish sausage without bagging

Anybody finish your sausage in a water bath without bagging them? I do large batches when I make sausage and my joule will heat up to 10 gallons so it would be awsome off I didn't have to separate and bag first so I can bloom. Also, what temp?
 
I have thought about doing that too.
The only problem I see is that some of the fat from the sausage would get in the SV unit.
And I'm not sure how I would clean it out of there.
If you try it please post your results.

I tried that recently and won't do it again. The water changed color and I don't want to have to clean out my sous vide and risk it getting gunked up. I don't think there was noticeable difference in the finished product, it's just more hassle/risk than I want to take after spending so much time and $ getting the product to that point.

If they're smaller sized casings they won't take very long to finish in the sous vide. If they're standard hog casings they should take about an hour, and if they're coming in off the smoker at 100F+ it'll be closer to 30 minutes. I was doing 1.5" 1lb summer sausage chubs and they took 45 minutes from a starting temp around 100F. I used a 7 gallon plastic tub, put them single layer in a 2.5 gallon hefty storage bags with a pot lid rack thing in the bottom of the tub to keep the bags separated. I did about 10 pounds this way but could have fit more.

I go to 152F on the internal temp and set my SV a little higher than that to start because the temp will drop when you load the tub full of meat. It also helps to boil some water and cover your container to help the SV get up to temp.
 
I’ve thought about trying finishing in the Sous Vide without bagging as well. Seems like finishing in the oven takes forever, but I too worry about gumming up my SV unit.
Maybe a hot cycle with a little vinegar would clean it up?
I’ll let someone else do that experiment....

Yeah , I'll have to take a second look , but I thought the paper work I got with my Anova said clean with vinegar bath .
Same as coffee maker .
