So I've been smoking for a lol bit now and actually just completed my first BBQ comp last weekend. So when the wife came across a real nice looking Packard brisket I said sure why not learn by fire haha. So it's about 13# did a lil trimming got the smoker up to 250 with alder and mesquit chunks and am settled in for the long haul any advice would be much appreciated. I have poured over the abundance of information on here and feel pretty confident she will turn out awesome
