Hey there folks! Good to be here!

As the title says, I'm from Southern California (about 30ish miles east of Downtown LA) and I've made some good stuff but I've also made some realllly bad stuff too. I don't mind making the mistakes as long as I learn from them. So far, I've not learned a lot!

My main setup is a Weber Kettle. I LOVE the versatility of the thing. I can't really afford to have a nice grill or a nice smoker so this was a good compromise (as far I'm concerned anyhow :) )

Issues I've had:

-my chicken thighs are underdone (bloody) but the temp is spot on.

-meat comes out dry though time and temp say it should be fine.

-bitter taste

So I'll be looking around this forum for advise on smoking on that unit. I've seen a lot, but still have questions! Oh so many questions :)

Welcome to the forums. I wish I had some tips for you but I'm such a noob to this that I'm sure you could teach me a thing or two.
