I am going to host party this weekend and we are preparing ribs and lamb meat for food. What should be my standard smoking time to make ribs juicy and presentable? Also I want the best aroma out of it.
 
I smoke St. Louis style ribs 5.5 to 6.5 hours @ 235 to 245 with no wrapping. Spritzing many times with fruit juice along the way. The time may vary sometimes. I use a very small pile of briquettes to get some coals going then its all wood until the end.
 
Depends on the type of rib, and how you want them along with what temp you plan on cooking at. I do St. Louis style ribs that run between 2.5 and 3 lbs. I like to cook ribs at 250F and cook them bone side down for 3 hours spritzing with apple juice after the first 45 mins and spritz every 30-45 mins. After 3 hours I'll wrap in aluminum foil with brown sugar and honey. I'll cook wrapped for another 2 hours and then rest them for about 20-30 mins and then throw them on the gas grill (medium low) to firm them up and sauce them (be mindful at this point as sauce with sugar will burn). I make mine very close to fall off the bone as most guests like them that way. I personally like a little more bite.

I should've added I do mine a day or two before and let them sit then reheat in oven at 275 for 45-60 minutes, they taste better to me that way
