Ive never smoked chicken before i have some chicken quarters that im about to marinaid in mojo,about how long do i smoke chicken for im using an electric smoker that stays about 225 any estamates?
 
Ok first off we smoke bybtemp here not time but I do understand the need for knowing then time factor. Now for chicken parts I would marinade for maybe 2-3 hours and then on to the smoker till the chicken is about 165° or so and then let it rest. Now for the time I would estimate maybe 2-3 hours should be plenty of time.
 
Yup, smoke at 225° - 250° till them parts reach 165° but no more en 170°. An ya round 2 ta 3 hours should do it. Now if ya wanna little crispier skin, pull em bout 10 ta 15° early an finish em up in a 350° oven.
 
For chicken, don't over do it though. 4 to 6 hours tops. I love it best on beef.

Chicken skin will come out rubbery though on the smoker unless you can top 325*. I end up throwing the pieces on the gasser for 15 minutes to crisp up the skin.
 
I take it when you finish up in the oven you do not cover it just leave it open to crisp the skin.
 
For wood.. I like a mix of 30% mesquite and 70% Hickory for chicken. The mix of the two keeps the Mesquite from over powering the meat flavor.
