Howdy all!
A Canadian living In the middle of a big city, Kawasaki, Japan since about 20 years ago.
No decent bacon in Japan so about seven or eight years ago I decided I had enough and decided to start making my own. Not only did it blow away what was available locally but it was even miles above what was store-bought in Canada.

Retired my vertical charcoal smoker about a year ago and just finished building a new electric wood box smoker.
I look forward to chatting with you guys learning new things.

If you see any glaring issues with the smoker, let me know as this is my first time building one.
I’m at least 1 to 2 weeks away from throwing any meat in it as I haven’t even started curing anything yet.
