Yesterday, had a thawed out TriTip sitting in the refer and a couple hours to kill. Put them together and this is what I got. Used a little olive oil and Jeff's Texas rub. On the Weber using my slow N sear at 225* until I got an IT of 140ish plus. Used some hickory. Quickly seared it (pic) at the end of the session.

Oh! That tri-tip looks wonderful! Looks like that TBS in your picture resulted in a nice smoke ring too!

Just curious how long did it take to get to 140 at that temperature? I normally cook them between 325 to 350 but have gone as low as 300. I need to do more research and taste testing I think.

Tri tip looks great!

Wife just did freezer inventory (we have 7) and she said I have 8 tri tips! Lol! she wants to cut down on my meat collection so I'll be doing some tri tips soon!

Since it was a pretty thin piece, it took me 2-1/4 hours.

A full smoker is a happy smoker,,,,,is your smoker happy today?? 
 
Point to ya for showing that you can do really great Q with a simple kettle! 

BTW.. If you like your beef a tad more rare, you can pull tri tips a little less than 140 and rest about 20-30 minutes..

Yes, had I not been busy turning the wrench on my '50 chebbie truck,  I would have pulled it at around an IT of 135*.    Still, it tastes pretty darn good being a little overdone.
