Smoked Mac & Cheese

recipe amounts i used will be posted above each picture except the cheese sauce needed
cheese sauce
2 cups milk
2 cups sharp cheddar cheese - shredded
3 tablespoons butter
3 tablespoons flour
make a roux. be careful not to brown it, it will be done when it starts to smell like pie crust. add 1 cup cold milk and stir, frequently. slowly add the other cup and bring to a very slow boil, dont walk away from the stove.it will thicken
remove pan and add 1 cup cheese, stir in. when melted add the 2nd cup and stir. you may have to put back onto the heat.
in a medium cast iron frying pan, add 1 medium diced tomato and 1 medium vidalia onion

add approx 1 cup of pulled pork or bacon works well here as well

add a layer of cooked macaroni

add a layer of cheddar cheese followed by some of the cheese sauce

repeat layer again until it comes out looking something like this

i smoked this on a propane grill to show that you can cook it without a smoker

i got the idea from Matt Dunigan's show..cant find his original recipe but i will give him some credit for it except he didnt make a cheese sauce or use pulled pork..lol
 
Though I can't taste or smell it I gotta say that it sure looks good.
I'm nominating this as best looking dish of the week, the parsley at the end gave such a nice contrast of colors.
Kind of like watching the sun rise, a pretty thing but it only lasts for a few minutes. And I'm sure that dish was gobbled up quick.
 
Great looking mac and cheese Teacup! I bet the addition of smoke really pushed the flavor over the edge.
