This Sunday I wanted to get my WSM going again(normally using my Assassin 24).

So I wanted to experiment a bit and jumped into making smoked coulotte.

One I injected and removed the fat cap. The other one I kept fatcap on and sweet yellow mustard before adding the rub.

The injected one was the winner. But I think both roasts reached their IT pretty fast and after 1,5 hours they were ready to be pulled out of the smoker. And I even kept the temp around 245 deg F(pulled it at IT 140, which is to the high side)

The injection was one that I found online, but with my own twist. And the rub is my brisket rub :)

Thanks :) Just bought this one second hand today, so I am going to slice the leftovers up for sandwiches etc :)
