Smoked Chicken and Rice

I love re-purposing my leftovers, it keeps life interesting and I get to putter around in the kitchen.

So I had some leftover smoked chicken from my Competition Chicken and all the drippings from their pan.
Man those drippings looked and smelled good, I couldn't just waste them, so I made gravy.
A quick roux with flour and butter, add in the drippings and a little water to smooth it out.
Then I chopped up my leftover chicken, some of the parsely garnish and added it into the gravy to simmer.

Made a pot of buttered rice and it was game on for dinner time.
