Hi alĺ merry Christmas.
Did my first smoker/grill LG900 Turkey for xmas dinner. Did one with a dry brine and the other wet brined over night.
Turned out ok but I slightly over cooked it.
Being the first time I've done Turkey this way I was very conscious of under cooking and probably started on the beers a bit early in the cook.
Still good enough to eat so pretty happy.

Some pics including finished birds..
Cheers Pete

Thanks Chris, yeah this was a good one to get out of the way. I'll be less anxious doing this type of cook in the future.
My first time wet brining a large bird, first time dry brining overnight, first time using the injector. All up some good learnings and tasty food.

I remember the first time I used an injector. It was one that had multiple holes on the end of the tip and when I was pulling it out the liquid sprayed all over the kitchen. Wife was not all that happy with me. Lesson learned.
