I recently returned a Traeger Timberline because for $1700 I thought it would smoke meat and not bake it. Plan B is to go with less expensive pellet grill and add a Smoke Daddy Smoke Generator. Inch and an eighth hole in the side and real hardwood chips or chunks to add the smoke I like. Looking for a mid grade wifi enabled pellet grill that can be modded for a generator. Now to find the right grill for this. Any ideas appreciated.

I'm not sure if you are talking about the Smoke Daddy tube or the cold smoke generator.  

In any case, the A-Maze-N Pellet Smoker (AMNPS) would likely be an answer to your problems.  Their is a tube version as well.  Especially since you would already have pellets for the pellet grill!

In short the AMNPS is a snake-like metal tray with holes that you fill with pellets and light one end.  Let it burn for a bit and blow out and viola perfect thin blue smoke that can burn for 9+ hours unattended :)

 


Ok, here is a little hard won advice. Pellets Smokers work by controlling the feeding of pellets and the flow of air via fans. I did something similar to my yoder. Generators work by pulling air via a venturi with a small air pump. what I missed was pellet smokers have a positive pressure due to the fans that control the fire. This pressure will inhibit the venturi and little if any smoke will enter the chamber. I played with it for awhile, varying the pressure and the size of the carb. Long story short what I had to do to get the smoke generator to work screwed with the smokers ability to control the heat. I still use it for cold smokes, works like a champ. When I want more smoke now I use an Amazin tube. works like a champ. Also try some 100% hard wood pellets, I use lumberjacks and find myself adding smoke less now.

Question on the A-Maze-N....I have a 14.5 WSM...would it work in there fairly well if I used it as the primary source of smoke occasionally and just burned straight charcoal?
 
Also, I had the opportunity to cook on a pellet grill last month.  I wasn't impressed.  I was cooking for the Fire Station (Stuffed chicken breasts) and had about 16 boobies to cook.  We made them on the pellet grill (Green Mountain brand) as the gas grill wasn't in good condition.  I checked it after about 45 minutes, and the side closest to the fire pot were fairly well along in the cooking process and the ones to the right side (facing the grill) were no where near done.  I knew it would take a while, but I didn't realize you would have such temperature extremes as the left side was quite hot and the right side was only on the "warm" side.  It kind of started making me reconsider getting a pellet grill in the future.

Yes. Quite well actually if you are cold smoking something. For higher temps smokes, just add chunks of wood (not pellets) to your charcoal if you want smoke. That's not to say you couldn't burn a tray or tube also. It would work.
