I've been using the rub and barbecue sauce recipes for years now, but I have a problem with the sauce which has appeared recently. I mix everything according to the recipe and barely warm it on the eye, keeping it stirred. The next day it will be like jelly. I dip it with a spoon and it's like getting jelly out of a jar. What am I doing wrong? I am puzzled. Thanks in advance.
 
You could be simmering too long and its taking too much moisture out of it.
 
Agreed. His recipe requires no thickeners. I actually just came from the kitchen having done two modified batches.

I personally start out on medium while I whisk everything together, then turn it down a click or two. When I see the first few bubbles i whisk again and turn it down another notch or two.

Repeat that process until you get all the way to low on your burner and pull after 15 total mins. Let cool naturally to room temp stirring occasionally. Then bottle it up. I toss the bottles in the fridge with the lids off for the fist couple of hours then lid the bottles.
