Going through some venison in the freezer to make sure it doesn't get pushed to the back and covered with this year's and grabbed a few tasty chunks out. GSP rubbed in and grilled to 125-130.

Not a big fan of Venison, but the wife is and she would love that.

I have been doing the same... whatever old is left come processing day Feb. 2023 will be added to the grind pile.
I hear ya! I collect gallon bags of grind as we process deer throughout the season. End of season, Ill take it a deer processor friend of mine, have them grind it all up at once in big bertha and make an order of sticks, brats and wrap the rest in 1lb,ers to freeze. Anything that might be left from prior year will go in that unless if freezer burnt, Then the dog eats well lol!
 
Man that looks good. My buddy wrapped his finger in a drill bit and cant process any this year. Tried to get him to talk me through it but he does not want to. Looks like another year with no venison for me.
