I have three beef ribs (not separated) that I cut off a prime rib a bit ago. these are not super meaty like dino ribs. I read these would be good to save and smoke...

Any tips from those who have done this? I cant see these taking more than 6 or so hours at 250?? just not that thick.

thoughts and advice is appreciated thanks

What you have are beef back ribs, comparable to baby back ribs on a hog. You are right about not being very meaty, but they take time to cook tender. I smoke them 3 or 4 hours until they get good color, then wrap with some beefy broth for about an hour or so, meat side down in the foil. You want to see some pull-back and the meat should probe tender with a toothpick. Then turn them over in the foil and set the open pouch back on to the grate to re-set the bark.
