I have an 18 lb whole turkey that I plan on brining and smoking for Thanksgiving.

I'd like to do the method of smoking at 225 until internal temp of 110 and then switching to 350 until it's done at 165 degrees.

A straight 225 smoking temp should be done in about 10.5 hours vs. a straight cook at 350 being done in about 4-4.5 hours.

My main question is this: What do you think the overall cook time will be with the two temp method? Should I plan on 6 hours?
