proper insulation for a fridge smoker

i will be removing the foam from the fridge and would like to re-insulate the unit. 

what type of foam do you recommend as insulation?

the unit has a plastic liner which will be scrapped

what do you recommend to install as a liner ?

i want to do this build and would like to do based on "experience". i have never done a build.

i have loads of experience using a smoker .

i will be using  2 elements inside, 120v, will be trying to make a smoke generator for it, 2 rakes

2 inch exhaust vent

I haven't built one yet, but everyone here seems to prefer fiberglass or rockwool instead of foam. I think some type of foam would be okay after you bake the fumes out of it a few times, but you would never know without running tests. I plan on making mine with a 3" exhaust vent.
 
You can buy fire rated foam insulation but it is expensive. Your best bet cost wise is probably rockwool. 
 
thanks , I will be using the rockwool for insulation, still at the design stage, would like to start it in 2-3 wks whan I have potentially more time:)
