Well I used my offset smoker for the first time on a 10lb pork butt this weekend. And what I was afraid of happened. I have a cheap charbroil offset smoker i got off CL and it leaks everywhere. I was up every hour on the hour having to add charcoal. And at one point I had to empty the firebox of ash and start over on heat due to ash build up. Took 20 hours to smoke but prolly would have been more like 17 or so im thinking but the heat would drop down to 200 from time to time. I also smoked some chicken breast but i forgot to take pics. 1 pork butt and 6 turkey legs. The pork butt was perfect considering I pulled the bone right out of it before i started pulling it apart.  All was very good but jezz a lot of work that could be prevented with a uds. I dont mind work but that was rediculous lol.

Looks like it all turned out great! You will be happy with a UDS build. It is well worth the time, energy, and money. I love mine. I can get 20+ hours from one basket of fuel. Makes an overnight smoke enjoyable.

Did you do any mods. To the offset smoke? Charcoal basket will help alot. Use lump charcoal .
It has very little ash buildup. Tuning plates will help keep the temp even from one side of the smoker
to the other. As far as the UDS if you need help on it just ask. Im right down the road from you.

Don't give -up on the little Smoker. Modify it and you'll see better results. As for a UDS , they are fun and easy , however I dislike Charcoal flavor and go with my SFB units everytime. I enjoy the extra work of feeding the Beasties. Gives me time to Visit, have nice long Conversations, solve the World's problems and watching my guest get sloshed (I don't drink alcohol , though I wish I could) I do the Coffee and Water thingy.

I do kind of a minion method with mine and get longer burns. I also put foil around the seam for the lid...
