looking at getting the Pit Boss series 3 electric analog. Adding a Auber PID, wanting to keep heat at 100 sometimes, and also adding a cold smoke generator like the smoking chief. Any idea what PID is needed to keep at that low of a temp? I can also plug the cold smoke into it as well for the required smoke time and hotter temps. But to start out I want to keep it 100 degrees.

100 aint nothing depending on the outside temps/food load without a PID,the heat from the smoke generator may raise the temps more than you want, running the cost up trying to make 1 suit your needs may be higher than buying 1 that is already capable may be cheaper in the long run ,I'd ck out the specs on all the different brands and email or call them if no clear cut info on the web.good luck as there's a lot out there to look at

Not intimately familiar with the Pit Boss but I find after about 3 hours the Amazing 6” pellet tube in my MES 30 will carry the temperature and start to increase the internal temperature of the smoker. When cold smoking cheese I turn on the smoker and let the temperature climb to 60F then I turn the smoker off and let the smoker cool down to 35F then turn it back on till it hits 60F. I’ll do this for about 3 hours then I have to open the door for 30 seconds to cool the smoker down. This is at an ambient of -20C(-4F). You will need a separate smoke generator for sure especially in Alabama.

The Auber WS-1510ELPM will do what you want. There are others as well but this is the one I use with my MES.

I will not use smoke at that lower temp just heat, 100 for an hour. Then Go to 130-140 with smoke them max out at 170 for a little bit again with smoke.
