Hey all. Just got a Pit Boss Classic 700FB yesterday. Really easy to put together. Did initial burn off last night. Today I am doing my first cook. Spare ribs 3-2-1 method. First three hours went just fine. 3 hour mark showed 165F. Wrapped. Temperature jumped to 200 by the time I walked back in house. Then went down to 185. Half hour later it is 199. Set it for 225. Controller is showing actual is 320. Any thoughts? I put my hand in and I have to say it did not feel like 320
 
A pellet smoker runs like an oven in your house.. it feeds pellets and the temps rise then it cools off and the temps drop. Pay attention to your oven next time and you'll notice it does the same thing.

Firth thing I would do it make sure the internal temp probe is clean (every time you use it) and use an oven thermometer (around $4 at Walmart) and use that to determine the temp on the grate. If you see the grate temp swing wildly contact Pit Boss and maybe get a replacement temp probe. If the grate temp is holding steady then the pellet smoker is doing it's job.

I've seen mine go from 140 to 320 but the temp holds steady at 225.
