Phosphates

I thought about using phosphates in my turkey injection this year. Likely would use the Kosmos product. I notice it gives the ratios for mixing with water. Typically I use melted butter as the base for my injection. Would it work to use the phosphates dissolved in the butter mix?

Do you add liquid to the melted butter to keep it thin ? Tony C's creole butter and jalapeno butter injections both have phosphates in them . I've used homemade phosphate injections on poultry , but never used butter . I like the idea , I think I would thin it with unsalted stock .

I used to use the Tony C’s but am going away from it because it contains sugars. I do all my rubs and injects these days using artifical sweeteners. Great idea thinning with broth. I think ill disolve the phosphate in broth and thin the butter mix a bit. Great idea thanks. I dis do a breast last weekend. Inject was 1 1/2 sticks of butter, tsp each of onion and garlic powder, 1/2 tsp chipotle powder and a liberal splash of jalapeno hot sauce. Came out delicious and moist. Still fascinated to add the phosphates.

Your mix sounds good . Phosphates will put it over the top . I learned it from daveomak . He has a mixing order for the ingredients . Maybe he has some input on this . Hang tight , give him time to see this .
