Trouble shoot all you want, but us old techs rely on known pattern failures to diagnose.
It's the onboard temp sensor, CampChef temp sensors are known to fail.
Mine did and they sent me a new one straight away, no questions asked.

My unit has low smoke, high smoke and then temps ranging from 150-500. I had it at 250. I have an email in to Camp Chef. Hopefully hear back in a day or 2.
 
I have a camp chef too and the environment plays a huge part in the temperature swings. On a cold over night cook it will swing between 20-60 degrees but on a hot summer day it only varies by 5-10. Other things to check would be your temp probe (make sure it's clean!) and chimney (make sure it is not blocked on the cooking chamber and the vent is not too open on a windy day).
