It been a while sense I posted it’s been a busy year and I will post my smokes from over the year of 2018 but today I figured I’d start with my 12.8lb packer choice grade brisket that I picked up for 2.50 a lb I trimmed up as the yoder kingman was coming to temp (250ish) decided to smoke over hickory and white oak splits after I trimmed up the brisket I’d say it weighed roughly 10lbs or so i did a basic spg seasoning injected with some beef broth and had some left over to make aju I tossed on the smoker at 930am and let it go till I hit a it of 150-160 range which was about 2pm I normally wrap nothing but at this point I wanted to eat dinner without wondering a time so I wrapped in foil with some broth in bottom to push threw the stall I bumped smoker up to 275 and let go roughly 530 I hit a it of 205 which I pulled the brisket off and opened the foil to stop the cooking I let sit for about 1 hour and cut up it was pretty delicious and had a great smoke ring moist as all could be for a choice grade I made aju from foil juice and left over broth which turned out really nice thanks for looking will post other smokes soon
