Sunday morning, S/W MI., 35* and a 30mph breeze is enough to make me stay inside and put off cleaning the yard for another day or two. All I was planning on was to enjoy one or two cold ones while watching NASCAR. Then those fearful words came from the kitchen. My wife found a tub of 80/20 she'd forgotten and asked if I'd fire-up my new Pit Boss for some burgers. "YES" but I'd use the Char Griller COS since I just CLEANED the Pit Boss. But the idea of smoked burgers stuck in my head. After some serious thinking-drinking I had a plan of attack. I loaded the side box with some 3 year old hard maple shavings to smolder while I cold smoked the burgers for an hour during which time I lit two small baskets of coal for the grill. After they ashed over I dumping the coals in the grill and closed the lid. 12oz's later I put the burgers back on and grilled as usual. O.M.G. those were the best burgers ever. The cold smoking added an extra flavor that's hard to beat. Now she says that's the only way I can do burgers, fine with me! Can't wait for the weather to break so I can smoke and grill w/ the garage doors open.
