Hello all ... I just purchased an off set smoker. Although it was a lot of money for me I understand that it is a cheap one. I made mods to it ... thermometers on each side of the cooking chamber near the grates. A vent duct to extend the smoke stack. Sealed the fire box with lavalock and the chamber lid. That helped to keep most of the smoke from leaking.
The smoker metal is thin. I am having a problem with the temp. in the cooking chamber to be the same on both ends. According to the thermometers I installed there is a 100 degree difference. The one on the far side of the firebox is right next to the vent duct, but I don't know if that would make a difference.
I saw a video on youtube where a guy used his grates from his firebox to make a baffle. He did it with a Oklahoma Joe grill which is made with thicker metal than my smoker and it worked for him. I know this is considered a cheapo smoker, but is there anything I can do to compensate for the uneven temps.
