I live in the beautiful Pocono Mountains of Northeastern PA. We are coming off the warmest Winter I've ever experienced and the weather was beautiful here today.

I'm just starting to learn about smoking meats. I would refer to myself as an accomplished cook who rarely backs down from culinary challenges. After watching hours of cable food programs filled with examples of lucious smoked meats I'm ready to try my hand at it. The problem is I know absolutely nothing about smoking.

I have a professional four burner gas grill that's put to use year-round but I have no smoker. I'd like to try smoking on the grill at first to get a feel for it if I can and before I invest in a smoker. All advice is welcome.
 
  Smoking is about low temps and smoke. I would suggeest you check out Jeff's 5 day e-course. It will give you a lot of good info.

Hello Sparky and welcome!

You can smoke in your grill if you can get the temp low enough. I can get mine down to 225° which is the optimal temp for smoking most meats. I open one burner and put the meat on the opposite side. Indirect method. I would recommend using an A-Maze-N Pellet smoker. I use one in my grill along with two large empty chicken or tuna cans with holes drilled in the top. I put chips in the tuna/chicken cans then put the lid back on and put them directly under the flames on top of the grates. I like the AMNPS best since it will burn for 10 hours on one load of pellets. The AMNPS should not go directly under the flames. You light this with a torch and let it go. Here is the web site. Todd is also a member on this site and a nice man. Welcome fellow Pa'er!! I have family up in pocono, not far from gouldsboro. If there's a will, there's a way to smoke, have fun, if you really get sick from the bug, u will be looking at other cookers. Lol .

The advice you got about the Amazn Smoker is really good advice and I highly recommend the product. I have been a tester for Todd for a couple of years and have used it in my grill many times. I just don't turn on the burner under it  and for slow cooking I only have one burner on low and it works. Once you try it you are going to want to buy a real smoker and that is when the fun starts 
 
Sparky, get an AMNPS and you can add smoke in your Gasser. Todd will be happy to supply you with a most intriguing little piece of equipment you couls d find... and it's useful after you learn the Grill thingy , and for any kind of meat . You'll enjoy it ,

Thanks for the warm welcome and all the info I need to give smoking a shot on the grill. I will be checking things out and doing some research on wood chips. I'm thinking we'd like fruit wood best but I'll cruise around the forum to see if I can get some input.
