I've been Propane BBQing for years and have been eyeing a coal fired smoker/Q for most of those years but couldn't give up the control of a gas grill.

My wife and I moved to Arizona from California and left the old grill behind and I finally pulled th trigger on a combo coal grill and smolker.

Did my first steaks the other night and want to jump right in this weekend and smoke some baby backs.

I'm sure (knowing me) it won't stop there.

Tatt, take advantage of that lovely Mesquite you have there, if you don't as strong a flavor,pre-burn it to embers...don't use that old (yuk) charcoal...and actually you will be doing the Rancher's a favor ,(if you ask first-usually it's free).

A steak grilled to a Med.Rare over Mesquite , is a thing of gastronomic Bliss.
