I am new to the forum, not new to smoking but consider myself a low level novice. I started out with a Rectec where combined with the Sear Daddy does great with steaks, chicken, and burgers and have enjoyed the smoked ribs and pork shoulders. As far as briskets, I feel it leaves me yearning for something more. About a year ago, I jumped into a PBC and have overall enjoyed it but have stuck to briquette charcoal and it seems like the food is dirty and gritty. A fellow co-worker told me lump burns too hot in it and another told me that my food probably tastes dirty due to briquettes having a dirt binder and to try lump. I have yet to try lump in it but figure ill give it a whirl. About two weeks ago, I ran across a used Primo XL with cart and side tables and jumped on it. I have only done simple things on it like steaks and burgers due to my 72 hour work week but am itching to throw a brisket on it when I go back to a normal 40 hour work schedule. With my extra earnings, I've went crazy buying stuff for it like a half set of grillgrates, a Mk4 Thermapen, Smoke X4, and Billows. A buddy that knows my spending habits and said, "You sure John Boy'ed the $H1+ outa that thing!" Figured I needed to up my game since I have the tools but lack the skill so decided to join. Thanks.
