Hi,

I new at this and could use some advice.Just got a Char-Broiler smoker and the grates have grease on them should I wash them or burn it off?
 
Because it's not known what kind of grease is on the grates, I'd wash it off with some soap and water, dry, then spray down with Pam or another type of high-heat non-stick spray (as well as the interior of the new smoker) and season it before smoking meat on them.

I'll go long with sumo on this in. Wash thegrates in soapy water and spray with cookin spray. Wash down the inside as well and treat it too. Then fire up the smoker and add chips and do a good hot smoke, this will help burn off any manufacturin oils so yall don't get a funky taste. Good luck.
