Can anyone clarify something for me?
I have a new pellet smoker (new to smoking). The dial temperature settings will set the temp in the fire box. but does not reflect the temp in the smoke chamber where the meat is. Should i be adjusting the firebox temp to maintain the desired temp in the smoking chamber?

Would be helpful to know what model of smoker
 
Whatever you have the dial set to and what reads on the display is close to what the chamber temp is. If you want exact then you need a probe setup like an inkbird or something to give you an accurate ambient chamber temp
 
In the "firebox" where the pellets are burning, you have temps of 1100F. So that dial is a thermostat for how you'd like the temperature where the meat is. There's a temperature in that cook chamber someplace that lets the control system know whether it's running too hot or too cold and to make adjustments. Most Country Smokers also have an analog gauge on the top which I think you can trust so that's a pretty good indicator at how well the control system is working.
