Howdy from WI. Been following the forums for quite some time picking up on helpful hints along the way. Have smoked a ton of salmon/trout in my lifetime using charcoal, electric, and propane. Received an older electric fridge smoker, which works great, but want to build something a bit bigger and nicer.

Picked up a large stainless double door commercial fridge. I am in the process of dismantling and removing the 2.5" of spray foam to replace with Roxul. I am planning to divide the smoker into two sides utilizing a steel partition, one for fish and one for meats, which is where my primary questions start coming into play.

I'm thinking that both sides will each have a 220v element of some sort and I want to utilize a PID to control each element. Both sides will not be ran at the same time, therefore, the PID will only need to control one element independently at a time. Is this possible? I'm assuming there will need to an individual SSR for each burner, but is it possible to wire a switch of some sorts to select which element the PID will control. I'm comfortable with electricity, etc, but PIDs and their capabilities are new to me.

Also would like to have one smoke generator for the entire build with ways to close of one side or the other, not sure if that will be possible. I will post pics as soon as I can.
