Most of my smoking has been on the round Brinkman smoker with water pan and charcoal.  I am retired from the railroad and my buddy and I like to fish. We smoke mullet and mackerel occasionally.  I used the round Brinkman smoker and had to cut fish into fillets to fit on grills. I decided to make a smoker from and old metal cabinet and coal fired heater that I have.  Had problems getting it up to proper temp and that's how I found this site.  Lots of good info here and I thank everyone for all the post.  Just did 17 whole mullet butterflied with tails on and they came out great.
