Hey there, well im the new guy on the block. I have been reading forums on here for a week now and thought I would join up with ya to get some insight from some vets that know their smoke. Im what i consider a novice in the smoking world. I have smoked a turkey for gobble day 4 times on my electric gourmet smoker and prolly 4 butts as well. But I now also have a cheap charbroil offset smoker that i got off c-list. I have smoked ribs on it a couple times and they have turned out good but not no where near as tender as i want. I have read about the 3-2-1 method and going to try that as soon as i get a free weekend. Oh and I live on the IL side of STL.
