I've been looking for some recipes for Lil Smokies and can't seem to find any. I have the seasonings purchased from Midwest and every thing else I need I think, but was wondering about smoke temps and times etc. I was figuring a pretty cool smoke for 4+ hours to keep them from finishing to quick then up the smoker temps to 180 or so to finish . Smoke to internal of 160 or so? Then the ice water cool down etc.
Any sugestions?

I typically do not go over 150 when smoking sausage. At that point the fat begins to render out.
 
I would smoke for 2hrs at 145-150 then finish off at 158-160 no more than that. Smoking at a lower temp too long will dry them out in my opinion. You could also smoke for a few hours and finish off in a steam bath or vac sealed and simmered in 160-5* water. for 20 min.
