Hello all. It has been quite since I have been on here as I have been working wayyyy too much and not home often. With that in mind, I have decided (not a quick or spontaneous decision) to look at starting a BBQ catering business. This will not be for at least a year and a half or more but I am spending my time researching everything. One of my questions is with regards to equipment. This will eventually be in a cold weather climate (at least for a few months:)) and need to consider that if I will do any work in the winter. I will be looking at an enclosed unit with a porch for the smoker and will initially be trying to work the tons of local festivals around the region.
From that point, I am wondering about how to plan for food quantities for an unknown number of customers covering several days. I have also been looking at the FEC500 and the Southern Pride 500. Am I looking in the right direction? The. Pellets appealed to me from many standpoints and I also currently use a Yoder pellet smoker that I (and everyone I have cooked for) absolutely love.
Like I said, this will not be for 1 1/2 to 2 years so I have some time and have already begun my homework. I also have some good contacts but wanted to touch base with "masses" and those that have been there done that. I want to keep an open mind and do it right.
